Recipe: Chicken Dinner in Foil

This is a yummy, very easy, "dinner in a packet" that was provided by Mirdza Hayden...it sounded so easy either in the oven or on the grill if your in a hurry and don't have time to tend the food on the grill.


2/3/16 Update: There has been a lot of talk about the dangers of cooking with aluminum foil. I still use it, but will be looking into this more. I'm sure done occasionally it should not be a problem.

Chicken Dinner in Foil (283 calories)

1/2 skinless chicken breast (opt for the organic variety)
1/2 cup chopped tomatoes, bell peppers and onions
1 medium red-skinned potato, sliced (opt for the organic variety)
Salt and pepper to taste
Tinfoil

To prepare: preheat oven to 375 degrees. Season chicken with salt and pepper. Lay the potato slices on foil, place the chicken on top of them, and sprinkle the chopped veggies on top of the chicken. Fold the foil to seal securely, place on a cookie sheet, and cook for 30 minutes or until the meat is cooked through. This varies with different ovens.
