Recipe: Chicken Dinner in Foil

This is a yummy, very easy, "dinner in a packet" that was provided by Mirdza Hayden who is co-moderating our Weight Loss Challenge...it sounded so easy either in the oven or on the grill if your in a hurry and don't have time to tend the food on the grill.

Chicken in Foil (283 calories)

1/2 skinless chicken breast (opt for the organic variety)
1/2 cup chopped tomatoes, bell peppers and onions
1 medium red-skinned potato, sliced (opt for the organic variety)
Salt and pepper to taste
Tinfoil

To prepare: preheat oven to 375 degrees. Season chicken with salt and pepper. Lay the potato slices on foil, place the chicken on top of them, and sprinkle the chopped veggies on top of the chicken. Fold the foil to seal securely, place on a cookie sheet, and cook for 20 minutes or until desired doneness.
